I love an easy slow cooker beef curry. But for my absolute favourite takeaway, I tend to order a chicken bhuna or tikka masala as I'm a creature of habits.

But, did you know they're also really easy to make at home? Just like this slimming slow cooker beef curry that can be either made on a Slimming World plan or keto.

And the beauty is, it can be ready for when you finish work with a smidgen planning. So, let me show you how, including how many calories it is for either versions of this recipe.

Why Try Slimming Slow Cooker Beef Curry?

  • This spicy beef curry in the slow cooker requires little babysitting
  • It's a mild beef curry, but you can add chilli to your slow cooker, too
  • The food processor makes it a doddle to make
  • It can cook within 3-4 hours on low heat or around 6-7 on high, depending on your needs
  • You could easily adapt it to a slow cooker chicken curry - it doesn't have to be beef
  • One switch from ground cumin to tikka curry powder gives you a tikka masala curry instead -it's your choice!
  • You can make it vegetarian with Quorn pieces
  • Depending what diet you're on, you can make it a low fat beef curry using Fry Light or keto with olive oil and cream stirred in at the end for a delicious tikka masala texture
  • There's also NO need to rely on a processed beef stock cube, either - it has LOADS of flavour!
  • Regular diced beef is fine or braising steak

How to Cook Beef Curry in a Slow Cooker

First, you'll find a my full list of ingredients in a recipe card towards the bottom of this page. But here, I'll show you how to make it so you can decide if it's for you!

  1. Blitz onions, garlic and ginger in a food processor until you have a paste and set aside
  2. Sear the beef using Fry Light or olive oil and seasoning in a frying pan, and fry until browned
  3. Add a paste and fry while stirring until most of the moisture has gone
  4. Add the spices and fry for a further 2 minutes until everything is dry nad coated
  5. Place in the slow cooker, along with tomatoes and tomato puree and cook on high for 4 hour or low for 6-7
  6. If on a keto or low carb diet and not low fat, then stir in double cream, greek yogurt and a touch mango chutney and serve with fresh herbs. You could add some coconut milk instead if you wish

Simple Beef Curry Version

I love my kitchen gadgets as they make life so much easier in the kitchen. But if you don't have a food processor (and let's face it, a dishwasher is nice too), you could finely chop and mince the veg instead.

Simply brown your beef first, then add halved and sliced onions and mince or grated garlic and ginger. Then follow with your spices and before adding to the slow cooker. It won't be a thick as this, but it's still a delicious curried beef recipe!

Also, you don't need to sear your beef or saute onions if you don't want to . But, I do recommend not skipping this step if you have the time. By frying first, it'll be a more caramelised and better easy beef curry recipe!

Low Carb Side Ideas

For those who've read my latest recipes, you'll know that I'm now following a low carb, Mediterranean diet with good fats. Also known as keto and the 5:2 diet. They help me feel more satisfied for longer.

So, when eating this recently, I whipped up a large leafy salad with extra virgin olive drizzled on top. And THEN spooned over a serving of my slow cook beef curry. But, you could also eat with cauliflower rice or steamed or sauteed vegetables.

What Type of Beef is Best for Curry?

Ideally, this beef curry recipe is best with chuck steak, AKA braising steak that comes from the shoulder. It tends to have a good balance of meat and fat that melts beautifully in a slow cooking beef curry.

But if you can't get hold of any diced beef, then it is equally as delicious as a slow cooker mince curry. In this case, I would look for extra lean mincemeat with 5% or less fat.

Slow Cooker vs Pressure Cooker

Note, I'm yet to try my any beef curry recipes in my multicooker, which is classed as a pressure cooker. I do plan on making it again soon in it, to which I'd cook it for 30 minutes as I do when cooking my basic slow cooker beef stew .

How to make slimming beef curry in the slow cooker in a rich spiced tomato sauce. It can be a Slimming World beef curry or a creamy keto beef curry.

  • 1 tbsp olive oil or Fry Light for Slimming World beef curry
  • 700 g beef fat trimmed and diced
  • 3 onions roughly chopped for food process or finely sliced
  • 20 g fresh ginger roughly chopped or grated
  • 4 cloves garlic rougly chopped or minced
  • 3 tsp ground cumin or tikka curry powder for beef tikka masala
  • 3 tsp ground coriander
  • 2 tsp tumeric
  • 3 tsp garam masala
  • ¼ tsp cayenne pepper optional
  • 400 g chopped tomatoes
  • 1 tbsp tomato puree
  • 150 ml water

Optional Keto additions

  • 80 g double cream
  • 50 g greek yogurt
  • 1 tbsp mango chutney if wanting extra sweetness
  • In a food processor, blend the onion, garlic, ginger and 3 tbsp of water until a paste has formed.

  • Spray a large frying pan with Fry Light for Slimming World or oil if making a keto curry, then brown off the beef.

  • Add the onion paste to the beef and continue frying for another 5 minutes.

  • Now add all of the spices and fry for another 2 minutes and transfer to your Slow Cooker.

  • Finally, add the tomatoes and tomato puree, then stir well.

  • Pop the lid on and cook on Low for 6-7 hours or High for 4 hours until the curried beef is tender.

  • Stir in some fresh coriander leaves and perhaps serve with either syn free rice on Slimming World or cauliflower rice or salad if making as a keto curry, to consume less carbs.
